Ingredients:
- Flour
- Eggs
- Breadcrumbs
- Goat Cheese - 4oz makes 4 medallions
- Pickled Beets
- Salad Mix
- Honey Roasted Cashews
- Balsamic Glaze
Instructions:
- Create your classic three bowl breading station with flour, eggs, and breadcrumbs.
- Cut your goat cheese into medallions, each about 1" thick. For an easier cut, put your goat cheese in the freezer for a little bit to make it more firm and easier handle.
- Dredge them in flour, dip them in egg wash, and then cover liberally with breadcrumbs.
- Once you have everything dressed, bring to your frying station, where you have oil set up at 350F.
- These won't take long and cook very quickly: fry for about 1-2 minutes on each side until golden brown.
- Remove from the oil and let drain with paper towels and a wire rack as you proceed through the next steps.
- Assemble your salad using mixed greens, sliced beats, and an assortment of nuts - any nut will do but we always recommend candied cashews.
- Once cool, gently place your fried goat cheese medallions alongside the salad in your bowl.
- Drizzle balsamic glaze over your finished product.
- Serve and enjoy!
